The history of Bissinger's dates back to 17th-century Paris, where the Bissinger family began creating delicacies that were enjoyed by European nobility, heads of state and important historic figures such as Ludwig of Bavaria and the Rothschild's. Karl Bissinger, the company's namesake, left France in 1845 and, along with his loyal master candy maker and all of the Bissinger candy making secrets, settled in the United States near Cincinnati, Ohio

Just as bread made lovingly by hand is so much better than machine-made bread, Bissinger's has been handcrafting fine French confections for nearly 400 years. Bissinger's is one of the last chocolatiers in the world to make candy by hand. Our candy makers stand over small copper pots, combining the best ingredients available to make the best chocolates available.

Bissinger's candy makers have been trained from one generation to another and patience, listening and love are key skills a Bissinger's candy maker must possess. In addition, Bissinger's confections are made with the finest ingredients imported from all over the world.

Bissinger's handcrafts each piece of candy with the utmost care and only offers candy to the customer when it's perfect. Machine-made candy is much more efficient, but also requires altering the recipes which results in altering the taste. Handcrafting is a slower, more expensive process because of the high cost of labor invested into the production.

Bissinger's makes a variety of its signature items without sugar and salt including Bear Claws, Pecan Bark, Cherry Cordials, Chocolate Almonds, Solid Chocolate and an Assorted Box, as well as seasonal items.

Bissinger's confections are best stored in a cool, dry area (65° to 70° F), without refrigeration.

What is bloom?

A:
Bloom is a condition that affects the surface of chocolate, not the taste, and gives the chocolate a dull, white appearance. The surface of sugar bloom is gritty and rough to the touch, whereas fat bloom has an oily or greasy feel.

Sugar bloom is caused by the condensation of water vapor from the air onto the surface of the chocolate. The sugar in the chocolate dissolves in the water, causing the water to evaporate and the sugar crystals to remain on the chocolate.

Fat bloom is caused by the migration of cocoa butter crystals to the chocolate's surface, which leads to recrystallization. This process may occur when the chocolate is exposed to warm or fluctuating temperatures.
